Ingredients:
Batch size: 20 cookies
- 200g almond flour
- 150g gluten free oat flour
- 70g almond-hazelnut butter
- 12 dates
- 1/2 cup of water
- 1tsp baking soda
- pinch of salt
- 80g chocolate chips (dark, vegan chocolate)
- Optional: 1tsp vanilla powder
Substitutes:
Nut butter: feel free to choose any nut butter of your choice
Flour types: you can also use almond flour or oat flour only, however, if you use almond flour, the fat content increases. If you are looking for a less fatty version - choose only oat flour. If you choose oat flour only, make sure you add more dates or 1tbsp of agave syrup for optimal sweetness.
Preparation
- Make a date paste by mixing dates and water together in a small blender. Set aside.
- Pre-heat the oven - 175 degrees.
- Mix the flours, baking soda, salt, vanilla and almond-hazelnut butter all together well.
- Add the date paste from step 1.
- Add chocolate chips.
- Add vanilla (optional).
- Mix it all well
- Form a small ball and then press it to create a cookie (aim for 5 cm sized cookie)
- Place the cookies on a tray with baking paper.
- Bake for 12 minutes.
- Let them cool off for 10 minutes before consuming!
